This recipe is AMAZING! We made it with our Norwegian salmon and fell in love! Our son isn't a fish eater (yet) so we also made it with chicken. The flavors of the sun-dried tomato cream sauce and spinach are the perfect comfort food combination. We make this with Parmesan mashed potatoes or pasta and there are never leftovers. You can use any whitefish or shrimp with this recipe too. If you don't have white wine, you can substitute chicken stock. Enjoy!
